Salmon and Mango Tartare with Lemongrass

Tartare de saumon et de mangue à la citronnelle

The ingredients

4 Atlantic salmon portions

200 gpieces of fresh mango

2 tablespoons shallot

½ tablespoon garlic

1 tablespoon ginger

3 tablespoons cilantro

2 stalks oflemongrass

2 tablespoons nuoc-mam sauce

the juice of a lime

1 pinch ofchilli pepper

2 tablespoons olive oil 


1.Removethe outer leaves from the lemongrass stems to keep only the tender hearts.

2.Chop themand mix them in a salad bowl with 2 tablespoons of shallot, ½ tablespoon ofgarlic, 1 tablespoon of ginger, 3 tablespoons of coriander, 2 tablespoons ofolive oil, 2 tablespoons of nuoc-mam sauce, the juice of a lime and 1 pinch ofpepper.

3.Cut 4 salmon portions and 200 g mangoes into small cubes.

4.Add to the bowl, mix well, then marinate in refrigerator for ½ h
